Garden of Goodness Salad

Salad Ingredients

  • 2 cups chopped kale or mixed spring greens
  • ½ cup shredded purple cabbage
  • 1 medium carrot, shredded
  • ½ cup cucumber, diced
  • ½ cup broccoli sprouts (my sprouting tray)
  • ½ cup cooked or canned chickpeas
  • ½ avocado, sliced
  • ¼ cup blueberries
  • ¼ cup pomegranate arils (or strawberries if in season)
  • 2 tbsp chopped walnuts
  • 1 tbsp hemp hearts
  • 1 tbsp ground flaxseed
  • Fresh parsley, chopped

Creamy Lemon Tahini Dressing

  • 3 tbsp tahini
  • Juice of 1 lemon
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup (We also like to use TMC)
  • 2–3 tbsp water (to thin)
  • ½ tsp turmeric
  • Fresh cracked black pepper to taste

Whisk until smooth and pour over the salad.
